These American-style Breakfast Potatoes are usually cooked in oil, but we’ve kept them healthier by using a low-calorie cooking spray instead. They’re a great choice when you need a filling breakfast that doesn’t involve bread, and are delicious served with a fried egg, a quarter of an avocado or on the side of your healthy fry-up. This recipe also works really well with sweet potatoes, if you fancy a bit of a change!

Hints & Tips

Below we added some of our communities most common hints and tips. We hope you find them useful.

Swap This

Swap the potatoes for sweet potatoes (they may need less cooking time, as they tend to cook faster), or the peppers for mushrooms.

NEW TIP
Deliriously filling brunch potatoes
I ran out of peppers, so swapped with some frozen mixed veg. I also used Henderson relish (as I'm vegetarian) instead of Worcestershire sauce. Have to say they were so filling and had to have them with eggs & baked beans.
I added cauliflower to add extra veg.
I served it with beans instead of fried eggs as had none.
