If you think a hearty stew has to bubble away on the stove for hours and hours before it’s ready to eat, think again! Our warming, spicy Caribbean Vegetable Stew takes less than 30 minutes to cook and a bit of chopping is the most difficult part of the entire dish! Not a massive fan of spice? Simply leave the cayenne pepper out if you prefer a milder stew.

The cayenne pepper gives a spicy kick to this stew. If you don't like too much heat, then just leave it out.This can be cooked in a slow cooker. Just throw all the ingredients except the beans and sweetcorn into the slow cooker and cook on Low for 6 - 7 hours. Add the beans and sweetcorn half an hour before serving to allow them to heat through.

Made a batch for work
Absolutely delicious, the first portion went down well for Sunday tea time! If you don't like much heat leave out the chilli!
