We’ve lightened up this recipe by baking the patties instead of frying them and have used wholemeal breadcrumbs for extra-filling fibre. This is the perfect way to use up leftover mashed potato, as well as any bread that may be going stale!

This is a great way to use up leftover mashed potato. Save your stale bread to make breadcrumbs. You can make them in advance, pop in a sealed bag and freeze for up to 3 months. Defrost then use as normal.
