Crispy on the outside and fluffy on the inside, these Corned Beef Hash Patties are comfort food at its best! We’ve lightened up this recipe by baking the patties instead of frying them and have used wholemeal breadcrumbs for extra-filling fibre. This is the perfect way to use up leftover mashed potato, as well as any bread that may be going stale!

Hints & Tips

Below we added some of our communities most common hints and tips. We hope you find them useful.

This is a great way to use up leftover mashed potato. Save your stale bread to make breadcrumbs. You can make them in advance, pop in a sealed bag and freeze for up to 3 months. Defrost then use as normal.

Instead of sautéing the onions in a separate pan, I put them in with the potatoes. (Saved on washing up 🤣).
Excellent meal for leftovers!
This is such a good meal to make if you’re trying to reduce the amount of waste you have. Stale bread makes the perfect breadcrumbs- and if, like me, you always make too much mash, then you can just use it in this recipe!
Prepare to get prep messy! Will be making more of these and freezing for either a light lunch with salad or a tea with veg & beans.
