Any mushrooms can be used. If using dried mushrooms, subtract the amount of stock for the amount of water used to rehydrate the mushrooms and use the mushroom stock in the recipe.
Henderson's relish is a gluten free and vegetarian sauce we often use in place of Worcestershire sauce. If you don't have any dietary requirements you could use Worcestershire sauce if you prefer.
