Use any green vegetables, courgettes, peas, green beans -fresh or frozen- in place of the veg above.

Cooking
Make sure you’ve everything to hand as when you add the ingredients it happens quite quickly
Really nice served with a smoked salmon fillet.
Cook salmon fillets in the air fryer the same time as risotto is in the oven. A delicious, filling meal in just over half an hour from start to finish.
My twist on summer veggies!
Adapted this recipe to what veggies I had in! Mushrooms, coblets, onions and topped with roasted butternut squash, roasted carrots and roasted radish!! Full of goodness and very filling!! Just delish!!!
